SHRIMPS WITH PINK GRAPEFRUIT AND TOASTED PINE NUTS


Ingredients

Sicilian red shrimp (or Argentinean red shrimp)

Pink grapefruit

Oil

Pine nuts

 

Method

Shell and devein the shrimp and cut them in half lengthwise. Put them between two sheets of clingfilm and flatten them gently with the blade of a heavy knife. Peel a pink grapefruit and fillet, saving the juice. Make a marinade with a little salt, the grapefruit juice and oil.

Place the shrimp in a baking dish, sprinkle with emulsion and let it sit for about an hour. Arrange the shrimps and grapefruit sections on plates, drizzle over a spoonful of the marinade. Garnish with pine nuts which have been dry roasted in a pan.
