RICOTTA GNOCCHI WITH PUMPKIN CREAM AND SHRIMP


Ingredients 
for the gnocchi

650 g fresh ricotta cheese

100 g smoked ricotta cheese

60 g breadcrumbs

75 g grated Parmesan cheese

2 large eggs

Zest of a lemon 

Timo

Salt and pepper

Oil 

 

Method

Mix the ricotta with all ingredients. Form the gnocchi, sprinkle with Parmesan and breadcrumbs and bake in the oven.

Ingredients for the sauce

Shrimps

Chopped shallots

Timo

Pumpkin

Celery

Carrots

Leek

Garlic

Salt and pepper

Oil 

White wine

Brandy


Method
 
Shell and devein the shrimps. Make a little stock by frying the skins and heads briefly in oil and adding a splash of brandy. Remove the skins and heads, Add the chopped celery, carrots, leek, garlic and a little water. Season with salt and pepper. Sauté shallots in oil and add the shrimp tails until cooked through. Dice  the pumpkin, roast it and  put it through a blender with the stock and a little oil to make a creamy sauce.

Serve the baked gnocchi with the shrimp tails and pumpkin sauce.
