Ingredients
For 12/15 blinis
1 egg
100 g milk
50 g fresh cream
80 g flour
8 g baking powder
Salt to taste
Method
Separate the egg yolk from the white and whisk the yolk with milk and cream. Add the flour and baking powder, making sure there are no lumps. Allow dough to rest for about 1 hour. Beat the egg white until stiff, add to the dough with the salt and whisk till foamy. Grease a non-stick frying pan and fry tablespoons of the mixture to form small pancakes 6/7 cm in diameter.

Fresh salmon fillet
Mustard
Oil
Salt
Lemon
Pink pepper
Sour cream
Chives
Method
Cut the salmon into regular pieces and scald it onto a hot greased pan for 1 minute. Slice thinly, place slices in a baking dish with crushed rose pepper and an emulsion of oil, salt and lemon juice and let sit for 1 hour. Stir the chopped chives into the lightly whipped sour cream. Spread the blinis with sour cream, arrange 1 or 2 slices of salmon on each and decorate as desired.
