SAVOURY MUFFINS WITH FRESH OREGANO GREEK FETA AND YOGHURT SAUCE


Ingredients (makes 12 medium muffins) 

250 g plain flour

10 g baking powder

200 g Greek feta

Fresh oregano

Salt

230 ml milk

2 eggs

50 ml oil

 

Method

Mix dry ingredients and solids in a bowl. Separately beat the eggs very lightly with the milk and oil. Pour the liquids into solids stirring gently until the mixture clumps together. ¾ fill silicone muffin tins and bake at 180° C (fan) for 18 minutes. Turn the oven off and leave the muffins in the oven for 5 minutes.

Ingredients for the yoghurt sauce

Thick Greek yoghurt

Cucumber

Garlic

Dill

Salt

 

Method

Peel the cucumber, remove the seeds and grate it. Leave it to drain in a strainer so as to lose as much liquid as possible. Grate or finely chop one clove of garlic and some dill. Mix into he yoghurt with a good pinch of salt, chill in a refrigerator for 30 minutes.
