CATALAN LOBSTER


Ingredients 

Lobster

Mixed salad greens

Taggiasca olives

Cherry tomatoes

Pepper

Boiled potatoes

Tropea's onion rings

Salt and pepper

Oil 

Lemon

 

Method

Cook the lobster. Make stock with the celery, carrots, onion and bay leaf. To a boil add the lobster and cook for about 15 minutes. Remove and allow to cool. Prepare the vegetables and salads. Crack open the lobster tail, extract the pulp and claws. Season with an emulsion of olive oil, salt, pepper and lemon.
