Puff pastry

Fresh ricotta cheese

Chopped spinach (or other green leafy vegetable)

Chopped onion

Ham, cut up

Grated Parmesan


Salt and pepper
Fresh eggs


Blanch the spinach briefly in warm water and squeeze out as much water as possible. Sauté the onion until soft and stir in the spinach. Cool. Pass the ricotta through a sieve, stir in the spinach, Parmesan, beaten eggs (reserving a few tablespoonfuls), salt, pepper and nutmeg. Set aside.

Roll out the pastry very thinly. Cut into a rectangle with a pastry wheel. Spread the ham and ricotta over half of the rectangle. Roll up into a strudel, brush with the beaten egg and bake at 180° C until golden brown.
