MINI CHICKEN AND GINGER BURGERS WITH LIME MAYONNAISE


Makes about 25 burgers

800 g minced chicken breast

3-4 spring onions

2 garlic cloves

1 teaspoon curry powder

Fresh ginger 

Parsley 

Mixed salad leaves 

Salt and pepper

Hamburger buns

Mayonnaise

Lime

 

Method

Put the minced chicken in a bowl. Chop the onions, garlic and parsley and add together with a teaspoon of curry powder, grated ginger, salt and pepper. Leave to stand for half an hour. With wet hands, form into meatballs about 30 g each, slightly flat. Bake in a pan without oil.

Mix mayonnaise with lime juice and zest. Grill the hamburger buns. Make up the burgers using half a bun, salad leaves, mayonnaise and chicken patty all held together by a wooden or bamboo skewer.
